Prehistoric (and delicious) Meat

I've often wondered what I would do if I can upon a wooly mammoth frozen in the ground, its meat still red, perhaps just a dozen or so millennia of frost bite. I would, for the sake of both story and curiosity, probably cut off a little steak and cook it over a fire.
While those odds of eating mammoth are somewhat long, I am fortunate to have another prehistoric creature gracing me with its presence of late. A good friend was kind enough to share a hind quarter of a musk-ox with me.
There is nothing better than knowing where your food comes from, knowing it was handled with care and respect, and perhaps knowing it comes from a creature who has survived for eons.
